Veggie Stir Fry with Chicken
Makes 6 servings
2 boneless, skinless chicken breasts - cut in bite-sized pieces
1/2 cabbage, chopped
3 c. bok choy, chopped
1 large carrot, julienne
1 large bunch of broccoli (chop stems into bite-size pieces and break apart flowers)
2 handfuls snow peas
1 T. sesame oil
1 T. ginger/garlic paste (or to taste)
1 t. toasted sesame seeds
Bragg liquid amino seasoning or Tamari to taste
In a hot wok or large skillet, add oil and chicken. Cook chicken until just browned on all sides. Remove chicken from skillet. Add remaining vegetables to skillet except broccoli tops, snow peas and sesame seeds. Stir constantly over high heat for-4-5-minutes Add chicken, broccoli tops, peas, sesame seeds and Braggs's or Tamari. Stir fry until veggies are just cooked but still crunchy, and chicken is cooked through - about 3 minutes. Turn off heat and let sit for 2-3 minutes and serve. Can also use tofu instead of chicken. Serve as is or over brown rice or buckwheat
Peach-Ginger Crisp
Makes 5 servings. Serving size 1 cup.
1/2 cup all-purpose flour
1/4 cup stevia, honey, agave nectar
1/4 cup stevia, honey, agave nectar (one of the two remaining from above)
3 tablespoons chilled butter, cut into small pieces
2 tablespoons sliced almonds, toasted
6 cups sliced peeled peaches (about 3 pounds)
1 tablespoon granulated sugar
2 teaspoons cornstarch
2 teaspoons lemon juice
3A teaspoon minced peeled fresh ginger
Preheat oven to 375. Lightly spoon flour into a dry measuring cup, and level with a knife. Combine the flour, 1/4 cup stevia, honey, or agave nectar, and other chosen sweetener in a bowl. Cut in butter with a pastry blender or 2 knives until crumbly. Stir in almonds. Combine peaches and remaining ingredients in a bowl. Spoon peach mixture into an 8-inch square baking dish. Sprinkle with flour mixture. Bake at 375 for 45 minutes or until lightly browned and bubbly.
