One Dish Chicken and Rice

The first time I made this Puerto Rican-style chicken-and-rice stew was for a crowd on New Year's Eve , it was a big hit.

Makes 8 servings

1 tablespoon extra-virgin olive oil
2 1/4 pounds boneless, skinless chicken breasts, trimmed and cut into 2-inch pieces
4 Anaheim or poblano chile peppers chopped
1 small onion,chopped
1 tablespoon dried oregano, crushed
1 teaspoon sweet paprika
1 teaspoon salt
1 8-ounce can tomato sauce
1 tomato, chopped
1 4-ounce jar pimientos, rinsed
8 pimiento-stufled green olives, sliced
2 tablespoons capers, rinsed
8 cups water
2 1/2 cups brown rice
2/3 cup packed chopped fresh cilantro

Heat oil in a Dutch oven over medium-high heat. Add chicken, chile peppers, onion, oregano, paprika and salt and cook, stirring, until the onions have softened. 3 to 5 minutes. Add tomato sauce, tomato, pimientos, olives, capers and water and bring to a boil. Stir in rice; return to a boil. Reduce heat to a simmer and cook, uncovered, until the sauce is thick, the rice is tender and the chicken is cooked through, 35 to 45 minutes. Stir in cilantro and serve.

Easy Apple Crisp

This is a great dessert that kids and adults will love. It's quick and easy to prepare.

Makes 6 Servings

6 medium sized apples, diced (Red Delicious, Gala or Macintosh)
1 t. cinnamon
1/3 c. apple juice
1 t. butter or ghee
1 1/2 c. whole-wheat, oat, or brown-rice flour
1/4 c. wheat germ or ground flax meal
1 t. cinnamon
1/8 t. stevia (optional)
1/4 c. melted butter or ghee
1/4 c. honey or brown rice syrup
1/4 c. water
1 T. maple syrup

Preheat oven to 350 degrees. Use a medium-sized Pyrex casserole dish, place 1 t. butter or ghee in dish and melt in the oven for 2-3 minutes. Spread butter around in dish, add apples, and sprinkle with juice and cinnamon. In a bowl, mix flour, wheat germ or flax, stevia and cinnamon together. Melt 1/4 c of butter or ghee. Add honey or rice syrup to butter, and pour over dry ingredients. Add water and mix well. Crumble mixture over apples and bake for 30-40 minutes. Drizzle 1 T. of maple syrup over the top and press down with a spoon. Can also add sunflower seeds, raisins, almonds or other fruit. Serve hot or cold with vanilla yogurt.
