Recipes for August 10, 2009

Roasted Pork Tenderloin

1 T. Dijon mustard
2 T. real maple syrup
2 T. water
1/2 T. garlic powder
One 2 lb. pork tenderloin

Mix the marinade ingredients in a bowl. Place the pork tenderloin in a roasting pan and pour the marinade over the top to coat the meat. Cover and marinade overnight or for eight hour during the day. Heat the oven to 400 degrees. Roast the pork in a slightly oiled pan, uncovered for 20-25 minutes on each side, basting with the juice several times, until fully cooked and only slightly pink in the middle. The meat will cook through when you take it out of the oven, so make sure it's still slightly pink when you take it out or it will get too dry. If it's easier, you can cook this ahead of time and re-heat when you get home from school/work.

Peanut Butter Balls

This is a tasty treat with lots of healthy protein, fiber and natural sweeteners. Eat two of these as a healthy snack with a glass of milk or a piece of fruit - yummy for snacks or even a quick breakfast for families on-the-go. Keep refrigerated, or even frozen. You can also use almond butter for peanut-sensitive kids.

1/2 cup natural peanut butter
3 1/2 T. Whey protein powder ("UltraMeal Whey" brand - found on my online store, or "Jay Robb" brand at natural foods stores)
1 to 2 t. honey or agave nectar, according to taste
1/2 cup total of raisins, shredded coconut, wheat germ, and/or sunflower seeds
1-2 T. brown sugar (optional)

In a large bowl, combine all ingredients. Stir until everything is evenly incorporated. Roll into balls. Store in the refrigerator.
