Celebration Style! Blueberry Almond Baked French Toast
Ingredients:
1 whole-wheat baguette (about 18 inches long)-cut into 1-inch cubes
8 large eggs
8 large egg white
2 cups low-fat milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/3 cup pure maple syrup
2 cups fresh blueberries
1/3 cup sliced almonds
2 tablespoons dark brown sugar
Instructions:
Prepare a 9x13 baking pan by spraying the inside with cooking spray.
Place the bread in a single layer in the baking pan.
In a large bowl, whisk the eggs and egg whites with the milk, vanilla, cinnamon and maple syrup. Pour this mixture over the bread in the pan. Scatter the blueberries evenly over the top and sprinkle with the almonds and brown sugar. Cover with plastic wrap and refrigerate overnight (at least 4 hours).
When ready to prepare, bake for 40-50 minutes at 350
Makes 8 servings
Turkey, Apple, and Brie Sandwiches
Ingredients:
2 tablespoons Dijon mustard
2 tablespoons honey
4 whole wheat rolls
8 ounces brie cheese, sliced into 4 equal parts
12 slices organic, natural turkey breast (3/4 lb)
1 green apple, cored and thinly sliced
Instructions:
In a small bowl combine the mustard and the honey and mix until smooth. Cut the rolls open horizontally and spread the bottom side with 1/4 of the mustard mixture. Layer on 4 slices of the turkey, 2 ounces of the brie, and 1/4 of the apple slices.
Makes 4 sandwiches
